Bourbon Peach BBQ Grilled Tofu

Sweet, smoky, and made for the grill, this Bourbon Peach BBQ Grilled Tofu brings peak summer flavor to every bite. Hodo Extra Firm Tofu is coated in a smoky-spiced rub, grilled until beautifully charred, then brushed with a punchy bourbon-peach BBQ sauce that hits just the right balance of sweet, tangy, and savory. Grilled peaches go alongside for an extra dose of caramelized summer goodness, all served over fluffy white rice and finished with fresh basil.
Ingredients
1 (10 oz) package Hodo Extra Firm Tofu
2 peaches, pitted and quartered
Fresh basil
White rice, to serve
Fresh basil, for garnish
Spice Rub
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon chili powder
¼ teaspoon cayenne pepper
1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons extra virgin olive oil
Bourbon Peach BBQ Sauce
1 peach, peeled, pitted and diced
½ cup barbecue sauce
3 tablespoons bourbon
Instructions
Preheat the grill to medium high heat.
Slice the tofu in half lengthwise, then cut into thirds, creating six patties.
In a small bowl, whisk together the spice rub spices and the olive oil.
Brush the spice rub on all sides of the tofu and set aside while you prepare the bbq sauce.
Prepare the bbq sauce. Heat the diced peach and bbq sauce in a small saucepan over medium heat for 4-5 minutes, until the peach is soft. Bring to a simmer, then add the bourbon. Cook at a simmer for another 2-3 minutes.
Remove from the heat and blend until smooth.
Place the tofu on the grill and cook for 2-3 minutes per side. Then brush both sides generously with the bbq sauce and grill another 2-3 minutes per side.
Brush the peaches generously with bbq sauce, and grill 2-3 minutes per each side.
Serve the grilled tofu and peaches over rice. Garnish with fresh basil.
