Kale & Sesame Yuba Noodle Salad

- 1 - 8oz. pack Hodo Sesame Yuba Noodles Locate Product
- 10oz. Pre-cut tuscan/dino/lacinato Kale (1lb if using whole)
- Fresh lemon juice
- ½ cup chopped herbs (parsley & scallions)
- ½ cup Chopped bell peppers and red onions (optional — this just adds more color and crunch)
- To taste toasted sesame seeds
- To taste a splash of lemon juice
- If using whole kale, strip the rib and tear into bite size pieces. In a bowl, add yuba noodles to kale and using your hands, massage the kale with the yuba strips, till kale is well macerated.
- Splash lemon juice, herbs and sesame seeds and toss to mix.
