With a tender and slightly chewy texture, yuba is a versatile, gluten-free alternative to grain-based noodles for bold sesame and tahini flavors.

This recipe provides a step-by-step guide to how to prepare yuba and recreate the flavor of Hodo’s Sesame Tahini Yuba Noodles at home. The creamy sesame sauce coats every strand of yuba in delicious flavor.

Ingredients

Teriyaki sauce

  • 1/2 tsp ginger, grated or finely chopped

  • 1 clove garlic, finely chopped  

  • 1/3 cup Tamari 

  • 2 tbsp brown sugar 

  • 2 tbsp rice wine vinegar 

  • 1 tbsp water

Sesame Sauce

  • 1/4 cup Tahini 

  • 1 tbsp rice wine vinegar 

  • 1 tbsp toasted sesame oil 

  • 1 tbsp water 

  • 1/4 cup teriyaki sauce (made in steps 1 & 2)

Instructions

  1. Make the Teriyaki Sauce: place ginger and garlic, Tamari and brown sugar in a bowl. Whisk together.

  2. Add the 2 tbsp rice wine vinegar and 1 tbsp water. Whisk again.

  3. In a separate bowl, make the Sesame Sauce: combine the Tahini, rice wine vinegar, toasted sesame oil, water, and 1/4 cup Teriyaki sauce. Whisk these together for 2-3 minutes or until all ingredients have come together. Your sauce should be smooth and shiny. 

  4. Using a knife, cut the yuba sheets into strips. Place these strips in a bowl of room temp water. Using your hands, gently massage the yuba until it loosens and becomes strips of noodles.

  5. Drain the noodles and place on a paper towel, dabbing off the excess water.

  6. Place your noodles in a bowl and toss with Sesame sauce.
