Tangy BBQ Tofu & Gluten-Free Honey Cornbread

When you cut our extra firm and extra meaty tofu into thick strips to mimic ribs, slathered up in Haven's Kitchen Tangy BBQ Sauce, you have a classic summer meal!”

Ingredients

Ribs

  • 2 (10oz) packages Hodo Extra Firm Tofu, cut into rib formation locate product

  • Olive oil

  • 1 pouch of Haven’s Kitchen Tangy BBQ sauce

Cornbread

  • 1 cup Renewal Mill 1-to-1 Gluten Free Baking Flour

  • 1 cup cornmeal

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 2 eggs, lightly beaten

  • 1 cup milk

  • ⅓ cup honey substitute

  • 4 tbsp butter, melted and cooled

  • additional butter, for greasing

Instructions for Ribs

  1. Open tofu packages and cut into 1inch diameter "ribs".

  2. Preheat the oven to 425.

  3. Combine ½ pouch of BBQ sauce with about a tablespoon of olive oil. Toss with the tofu gently to coat it.

  4. Turn stove onto medium-high heat. Using an oven safe pan, fry the tofu for about 2 minutes each side.

  5. Transfer tofu to the oven, and bake at 425 for 10 minutes, until golden brown and finish off with more Tangy BBQ sauce.

Instructions for Cornbread

  1. Preheat oven to 375ºF. Grease a 8X8 baking pan with about 1/2 tbsp butter.

  2. In a large bowl whisk together cornmeal, flour, baking powder, baking soda, and salt.

  3. Push dry ingredients to the sides of the bowl, so you have a well in the middle. Add eggs, milk and honey to the well and stir to combine.

  4. Add melted butter and combine thoroughly.

  5. Pour batter into greased pan. Bake for 30 minutes, rotating halfway through, until golden brown. If not baking in a cast iron skillet, it may take a few extra minutes to bake. Check with a toothpick inserted in the middle to come out clean.

  6. Let cool for 10-15 minutes, then slice and drizzle with extra honey if desired.
