Mango Lime Salad with Thai Curry Nuggets

Ingredients
- 1 (8oz) package Hodo Thai Curry Nuggets Locate Product 
- 1/5 cup red onion, sliced thinly 
- 3 tbsp carrots, sliced thinly 
- 1/3 cup cucumber, sliced thinly 
- 1/3 cup cherry tomatoes 
- 1 qt mixed salad greens of your choice 
- 2 tsp fresh ginger, peeled and minced 
- 1 tsp fresh garlic, peeled and minced 
- ½ cup mango, peeled and cut into thin slices 
- 3 tbsp lime juice 
- 1 tbsp agave (optional) 
- 3 tbsp rice wine vinegar 
- Pinch white pepper 
- 2 tbsp oil of your choice 
- Salt & pepper 
Instructions
- Cut all veggies and nuggets and set aside. 
- Puree ginger, garlic, and mango in a food processor. 
- Add all other dressing ingredients to the puree except the oil. 
- Add oil slowly to blend. 
- Toss all ingredients together and enjoy!
