Five Spice Farro with Collards and Orange Mojo

Ingredients

  • 4 cup Braised* Tofu, cut into 1/2’” cubes

  • 1/3 cup orange juice

  • 2 tsp garlic, finely chopped

  • 1/3 cup olive oil

  • 1/3 tsp chili flakes

  • 1 tsp orange zest

  • Salt & pepper to taste

  • 2 qts collards, cut into ½” strips, blanched and drained

  • 1 1/3 cup farro, cooked and cooled

  • 2/3 cup Red onion, thinly sliced

  • 3 tbsp cilantro, chopped

Instructions

  1. Put 1/2 c dry farro into a saucepan with 1 1/2 c water and a pinch of salt. Bring to a boil and then lower heat to a simmer. Cook until Farro is fluffy and all water has been absorbed. 15-30 minutes.

  2. Heat oil and vinegar and bring to a simmer.

  3. Remove from heat and add all other ingredients.

  4. Prep the vegetables and dice tofu.

  5. Mix all ingredients together.

  6. Enjoy!
