Tabbouleh

Ingredients
1 (10oz) package Hodo Firm Tofu, cut into small cubes Locate product
1 cup bulgur cracked wheat
2 cup water or vegetable stock
2 cup seedless cucumbers, small diced
2 cup Italian parsley, chopped
2 cup cherry tomatoes, halved
1/2 cup green onions, chopped
Dressing:
2 cloves garlic, minced
2 tsp Dijon mustard
1/4 cup fresh lemon juice
1/2 cup extra virgin olive oil
1 tsp kosher salt
1 tsp honey or sugar
Black pepper to taste
Instructions
Boil stock or water and pour over bulgur. Cover and leave to steam for 15 minutes, then fluff.
Whisk dressing ingredients together.
Toss bulgur with tofu, cucumbers, tomatoes and herbs and pour on dressing (to taste).
