Summer Fruit Salad

Yields: 4-6 Servings

Ingredients

  • 2 (10oz) packages Hodo Extra Firm Tofu, ½” cubes Locate product

  • 1 medium navel orange, peeled and ½” cubed

  • 1 medium cucumber, seeded and ½” cubed

  • ¾ pint strawberries, trimmed and ¼” diced

  • 1 mango, peeled, seeded and ½” cubed

  • 1 banana, peeled, ½” slices

Dressing

  • 1 oz. fresh lemon juice

  • 1 tbsp Evaporated cane juice

  • 5 leaves fresh mint, chiffonade

  • 1 pinch  salt

Instructions

  1. Prepare your fruit and tofu and set aside. Prepare your dressing.

  2. Toss dressing into tofu and fruit mixture.

  3. Garnish attractively with lemon zest and mint sprig and enjoy!
