Summer Tagine Salad with Spicy Harissa Tofu Cubes

- 8oz Hodo Moroccan Cubes Locate Product
- 2 Zucchini sliced into ¼” slices
- 2 Carrots sliced into ¼” slices
- ½ red onion, sliced
- 1 T Crushed/chopped fresh ginger
- 1 T Chopped garlic
- ¼ C Chopped parsley
- 2 T Lemon juice
- S&P to taste
- Mix Moroccan Cubes, zucchini slices, carrot slices, red onion slices, chopped ginger, chopped garlic in a bowl. Place on a baking sheet and roast on 375 for 30 min. Turning once or twice to ensure even coloring.
- Remove and let cool.
- Mix with chopped parsley, lemon juice and S&P
