Summer Tagine Salad with Spicy Harissa Tofu Cubes

Ingredients

  • 8oz Hodo Moroccan Cubes Locate Product
  • 2 Zucchini sliced into ¼” slices
  • 2 Carrots sliced into ¼” slices
  • ½ red onion, sliced
  • 1 T Crushed/chopped fresh ginger
  • 1 T Chopped garlic
  • ¼ C Chopped parsley
  • 2 T Lemon juice
  • S&P to taste

Instructions

  1. Mix Moroccan Cubes, zucchini slices, carrot slices, red onion slices, chopped ginger, chopped garlic in a bowl. Place on a baking sheet and roast on 375 for 30 min. Turning once or twice to ensure even coloring.
  2. Remove and let cool.
  3. Mix with chopped parsley, lemon juice and S&P
