Mexican Pizza

Yields: 2 small or 1 large pizza

Have a hankering for homemade fast food Mexican pizza? It's super easy, quick, and plantifiable with your favorite meaty Hodo Mexican Crumbles!


Ingredients

  • 1 (10oz) pack of Hodo Adobo Mexican Crumbles LOCATE PRODUCT

  • 4-6" corn tortillas or 2-12" flour tortillas

  • 1 (10oz) red enchilada sauce

  • 1 can refried beans (or homemade!)

  • 4oz shredded cheese

  • 2 tbsp chopped tomato

  • 1 scallion cut into rings

  • 2 sprigs cilantro chopped rough with stems

  • 5 pitted black olives cut into rings

  • 2 tbsp sour cream

  • 2 tbsp guacamole

  • Vegetable oil

Instructions

  1. Air-fry, bake, or deep-fry your tortillas till crispy and set aside.

  2. Empty the contents of one package of HODO ADOBO MEXICAN CRUMBLES into a skillet with a little bit of oil to brown to desired texture. About 2-5 minutes.

  3. Heat up half a can of refried beans in a saucepan or microwave.

  4. Assemble the pizza by spreading a layer of beans on the bottom tortilla, then a layer of Hodo Crumbles, then the second tortilla

  5. Spread enchilada sauce and shredded cheese on top.

  6. Place in oven and broil on medium high heat until cheese is melted. About 2-3 minutes.

  7. Remove from oven and top with chopped tomato, scallions, cilantro, sour cream & guacamole.

  8. Place on a cutting board and cut into wedges!

  9. Enjoy!
